Peppermint Cookies!

I cooked up some delicious peppermint cookies this evening! They are very fun and great to eat. They are a bit shortbread-y so they go best with milk;) They totally get you into the holiday season!

I got this recipe from Allrecipes. I don’t know if you’ve ever heard of the website, but it’s a great place for different recipes! This recipe is by: pchanner.

~ 1 c. Butter {softened}

~3/4 c. white sugar

~1 egg {beaten}

~3 c. of all-purpose flour

~1/4 tsp. of salt

~ 10 crushed candy canes{your discretion of how much}

This isn’t much of icing, it’s more of a glaze to attach candy cane toppings.

~3/4 c. confectioner’s sugar {I used a bit more… 1 c.-1 1/2 c.}

~5 tsp. warm water

  1.            Preheat oven to 350 degrees F (175 degrees C).
  2.          Beat the butter and white sugar with an electric mixer in a large bowl until smooth. Beat egg into butter mixture until completely incorporated. Mix flour and salt into the butter mixture until just incorporated. Fold crushed candy canes into the batter, mixing just enough to evenly combine. Roll dough into balls 1 tablespoon at a time; arrange on baking sheets. {I didn’t really listen to this step.. in the pictures you can clearly see I did not roll😂…maybe I’ll look closer to the recipe!}
  3.        Bake in the preheated oven until firm, 8 to 10 minutes. Allow cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

  1.        Whisk confectioners’ sugar and warm water together in a small bowl until you have a smooth icing. Dip top of each cookie in the icing, Top with additional crushed candy cane, if desired. Set aside to let the icing dry, at least 5 minutes.

The Finished Piece!
